GOLDEN MUESLI BARS

Makes 16-20 pieces

1/4 cup extra virgin olive oil
1/3 cup honey
3 eggs
2 cup rolled oats
1/3 cup coconut
1 tbsp linseeds
1/4 cup sunflower seeds
3/4 cup sultanas

Whisk together extra virgin olive oil, honey, eggs. Add dry ingredients and mix. Line 20x20cm square baking tin, then pour mix in and spread evenly. Cook in oven at 160C fan forced 35-40 min. Cool completely in tin then slice into 16-20 pieces, or as your family enjoys a muesli bar most and enjoy. Store in airtight container up to 1 week. (I personally like to store ours in the fridge to keep them really firm)
