If you’re a lover of lemon and zesty flavours then this Lemon Protein Collagen Bar is bound to make you one happy human. Incorporating protein, from both almond meal and a good quality protein + collagen powder with a touch of vanilla and honey to sweeten the deal. Coconut oil is the final binding ingredient and necessary for the bar to solidify.

These bars are easy to whip together in a bowl, no blending or food processor required to make a truly delicious snack in no time at all. You can swap lemon out for lime or orange as you wish.

LEMON COLLAGEN PROTEIN BARS

Serves 12

Gluten free : Dairy Free

1 cup desiccated or shredded coconut (unsweetened)

3/4 cup almond meal

1/2 cup unflavoured collagen + protein powder

3 tbsp coconut oil, melted

3 tbsp honey or maple syrup

2 tsp vanilla extract

Juice and zest of 1 lemon (less zest if you prefer a lighter lemon taste – this is definitely celebrating zest!)

Combine coconut, almond meal, collagen + protein powder in a bowl and mix. Melt the coconut oil, then whisk in the honey, vanilla, juice and zest of the lemon. Pour over the dry ingredients and mix with a fork. Line a loaf or square baking tin with greaseproof paper. Pour the mix into the tin and spread it out evenly. Place in fridge to set for 3-4 hours. Slice, serve and store in the fridge only. Stores up to 2 weeks.
