This salad will make you love your greens, even kale, all over again! With a creamy tahini dressing you can enjoy on this, but even better one to batch prep and stash in the fridge to pop on all sorts of veggie variations to give them flavour, life and excitement again.
ZATAR CHICKEN COS KALE SALAD WITH CREAMY TAHINI DRESSING
Serves 4 as a main
150g kale leaves, shredded (about 6 leaves)
2tsp lemon juice
3 cups chopped cos lettuce
1/4 cup finely chopped mint
1/4 cup finely chopped parsley
2 tsp finely chopped dill
400g cooked chicken breast, shredded
2 tbsp extra virgin olive oil
1-2 tbsp zatar (your preference on strength in flavour here)
3 ripe plums, sliced
50g toasted walnuts, crushed
30g grated parmesan cheese
Dressing:
1/4 cup tahini
1/4 cup natural yoghurt
1 cloves garlic, minced
1 tsp Dijon mustard
3 tbsp lemon juice
Salt pepper
Add kale to mixing bowl with a good pinch of salt and the lemon juice and massage salt and lemon into kale leaves, leave for 10 min. Then add cos, herbs and toss. Combine shredded chicken with olive oil and zatar in a separate bowl, season and toss, then add to the main salad bowl. Whisk together ingredients for dressing, loosen with some water if it feels too thick to pour. Then pour over salad ingredients and toss to coat. Layer half the salad on the base of serving platter, add half the plums and repeat. Top with crushed walnuts, grated Parmesan, then season with salt and pepper and enjoy.
