I bloody love a veggie burger, my Mum used to buy the best ones for us in Avalon/Newport when we were little and I still think about them so am forever on the mission to make tasty ones. 🤤🤤🤤You can too my friend – I am popping this recipe below. Such a goodie for leftover rice and most of the ingredients are in your pantry! 🍔 Been a massive week, exhausting but energising! Makes 2 burgers

1 cup cooked brown rice
1 egg
2tsp garlic oil (can use olive oil)
1tsp tamari
1/2 cup oat bran (can use oats)
2tbsp chopped fresh parsley or 1 tsp dried
1/4 cup chopped peanuts
Combine all ingredients in a bowl, mix with hands, shape into firm patties (I made 2) and place in fridge to set for 10-20 minutes. Cook on medium heat for 5 minutes each side. Serve with your fave toppings and trimmings – helloooooo beetroot and gherkins
