I popped some delicious chai spices into the Wholefood Choc Chunk Brownies – cinnamon, ginger, nutmeg and cardamom to warm up the delicious chocolatey-ness of the brownies and baked some apples with a bit of butter and cinnamon too. The home made ice cream is entirely up to you, this is a cottage cheese variation, but you could go with whipped ricotta, greek yoghurt or your own choice of ice cream. Topped it all with some chopped pecans and voila!
SPICED CHOC CHUNK BROWNIE WITH BAKED APPLE AND COTTAGE CHEESE ICE CREAM
Serves 8
Gluten free : Vegetarian
1 packet Mt Elephant x Brown Paper Nutrition Choc Chunk Wholefood Brownie Mix
60ml extra virgin olive oil
2 free range eggs
3 tsp ground cinnamon
½ tsp ground nutmeg
½ tsp ground ginger
½ tsp ground cardamom
4 pink lady apples
2 tbsp unsalted butter
To serve: chopped nuts of choice, optional
Cottage cheese ice cream:
2 cups (500g) cottage cheese
⅓ cup honey
2 tbsp almond butter (( used Mandole Orchard)
1 tbsp vanilla extract or 1 vanilla bean, seeds only
Opt: 2-3 tbsp choc chips – but not necessary if eating with a choc brownie
Blend all ingredients (except chocolate chips) for the cottage cheese ice cream and pour into a loaf tin. Set in freezer for 3-4 hours. If you leave it longer, it will harden a lot more, so be sure to leave it on the bench top to soften for 10 minutes (approx) prior to serving. Make the brownies by whisking together extra virgin olive oil and eggs in a bowl. Then add the dry ingredients from the Mt Elephant Wholefood Choc Chunk Brownie mix with 1 tsp ground cinnamon, nutmeg, and mix. Pour into a lined loaf tin or rectangular baking dish and bake for 17-19 minutes on 170C (fan forced). Allow to cool in tin for 20 minutes before transferring to a rack to cool completely. Whilst the brownies cool and the ice cream is setting, prepare the apples so they are ready to bake about 30 minutes before you’re going to serve the dessert. Core each apple and then slice in half. Add 1 tsp butter to the middle of each apple and sprinkle generously with cinnamon. Bake in the oven for 10 minutes flesh side up, then turn each apple over carefully and finish baking them for 25-30 minutes or until soft. Plate up the dessert by laying the apple cut side up on the plate, follow with a slice of brownie and finish with a couple of scoops of ice cream (or ricotta, greek yoghurt, or fresh whipped cream). Sprinkle with nuts to finish and tuck in immediately.
