Sneaky veg, cacao and prune energy balls

Maybe weird, maybe wonderful? Either way delicious, fibre charged, and a different take on your energy ball combination.

SNEAKY VEG, CACAO AND PRUNE ENERGY BALLS

Makes 12-15

1/2 cup rolled oats

4 tbsp raw cacao powder

1 cup pitted prunes

1x 400g tin black beans, rinsed and drained

1 tbsp maple syrup

3 1/2 tbsp almond butter

Desiccated coconut for rolling

Add oats to a food processor to blitz to a crumb first, then add all remaining ingredients and blitz to a uniform consistency. Measure 1-1.5tbsp and roll into balls. Roll through coconut and place in fridge or freezer to set. If storing in fridge use within 3-4 days (due to black beans). If storing in freezer (my preference!) you may store up to 1 month or more. Allow to defrost/soften for about 5-10 minutes before eating.
