SALMON PEA HERB FRITTATA
Serves 4
Gluten Free
12 free range eggs, whisked
⅓ cup dairy milk
1x 400g tin wild caught red or pink salmon, bones and skin removed
1 cup frozen peas
1 tsp lemon zest
1 tbsp finely chopped dill
½ cup feta, crumbled
Sea salt and black pepper
Heat oven 180C and line a 22x22cm square baking dish with greaseproof paper. Whisk together eggs and dairy milk, season with salt and pepper and set aside. Add salmon, frozen peas, lemon zest dill and feta to the baking dish and toss. Pour egg mixture over the salmon ingredients. Bake in oven for 40-45 minutes. Enjoy a slice warm or cool, slice into portions and pop into the fridge for a great high protein meal prep option. Keeps up to 5 days in the fridge.
