One pan Moroccan fish with basmati and chickpeas

My One-pan Moroccan-inspired Barramundi combines quality protein in the fish, fibre-rich chickpeas and basmati rice, greens and flavour into a meal that feels far more impressive than the effort required to make it. It’s the kind of recipe that proves healthy food doesn’t need to be complicated to be nourishing.

ONE PAN MOROCCAN INSPIRED FISH, BASMATI + GREENS
Serves 2

1 tsp extra virgin olive oil
2 cloves garlic, minced
150g basmati rice, rinsed
400ml water
2tbsp Moroccan spice blend
150g cooked chickpeas (tinned, rinsed and drained)
75g baby spinach
2 fillets (approx 160g each) barramundi
3-4 tbsp finely chopped herbs
1/2 lemon
Sea salt and black pepper
Opt : chilli flakes

Heat a frypan on medium heat. Add olive oil and garlic and cook 30 seconds, then add the rice and stir. Pour in water, stir, pop the lid on and bring to a boil. Once boiling, remove lid, add 1 1/2 tbsp Moroccan spice blend and chickpeas and stir, then add the spinach and toss, then season with salt and pepper. Spread out evenly over the pan. Coat the barramundi with remaining spice and then press into the rice. Cover with the lid and cook for 10-12 minutes. Remove from heat, garnish with fresh chopped parsley, give both fillets of barramundi and all the rice a big hit of lemon juice and another crack of salt and pepper and tuck in.
