Juicy, fibrous, delicious, a quick one to grab and run out the door for those days you need to, or to enjoy with a friend over a cuppa! Been making these for 30+ years so safe to say – they’re a goodie!

Wheat bran is one of the richest natural sources of insoluble fibre and is often used to help relieve constipation. There’s a high level of evidence for increasing stool weight and reducing transit time. If you need some regularity with your bowel motions – THIS is a recipe for you. If you like delicious wholefood snacks and quick breakfasts to grab and go when you don’t have time THIS is a recipe for you too!

OG FRUIT BRAN MUFFINS
Makes 12 large muffins

2 cups wheat bran
2 cups milk
1/2 cup melted butter or light flavoured extra virgin olive oil
1/2 cup coconut sugar or honey
4 eggs
1 tbsp cinnamon
1 tbsp baking powder
2 cups chopped pear
1 1/2 cups frozen blueberries
3/4 cup sultanas
3 cups wholemeal flour

Heat oven to 180C (fan forced) and line a 12x 1/2 cup muffin tray with patty pans or grease the pan (as you prefer) Combine wheat bran and milk in a bowl, mix and set aside to soak 10 minutes. Add oil/butter, sugar, eggs to another large mixing bowl and whisk. Then add cinnamon and baking powder and whisk. Pour in the bran mix with all the milk, mix then stir through the fruit. Once all combined, fold in the wholemeal flour. Divide between muffin cases (they’ll be overflowing – don’t worry!) then bake in the oven for 30 minutes. Cool in the tin for 10 minutes and then tuck in. Enjoy!
