Nutty green bean chickpea apple salad

Today’s delicious salad to go with dinner tonight (about the most insta-nt of the gram I’ve been in a long time… too good not to immediately share!!!) NUTTY GREEN BEAN CHICKPEA APPLE SALAD WITH YOGHURT DRESSING yum yummity yum!!!! Used up some of the remaining fresh ingredients from our produce delivery @thegoodbunch before the newbie tomorrow, plus a bit of extra crunchy toast from almonds and the yummiest evoo @cobramestate and @jalna_yoghurt yoghurt dressing – the full recipe below for you.


Serves 4 as a side

300g green beans, trimmed, blanched and refreshed

120g cooked chickpeas

2 spring onions, white part finely chopped

1/3 cup almonds, chopped and toasted

1 green apple, sliced into thin sticks

2tbsp finely sliced mint

3tbsp finely chopped parsley

2 tsp nigella seeds


2/3 cup natural yoghurt or 1/2 coyo for vegan

1tsp honey or maple for vegan

2tbsp extra virgin olive oil

1 tbsp lemon juice

Sea salt and black pepper

Whisk all ingredients for dressing and set aside. In a large bowl toss all ingredients for salad together, keeping a small amount of almonds to garnish then season with sea salt and black pepper. Pour salad dressing over and toss to coat. Pop onto a serving plate and sprinkle almonds to garnish and serve.
