If you have nuts, some dates, cacao and bit of leftover chocolate to use up then make this slice! It’s rich in magnesium foods such as nuts and cacao, fibre from both nuts and dates, and the healthy sources of fats/fibre can help slow the release of sugar into the blood stream – an important consideration when it comes to eating sweets – yes, EVEN with healthier options.

Why should you even care about MAGNESIUM RICH FOODS?

Mg is a mineral used in a number of body systems. It can support the nervous system and play a role in reducing stress/anxiety plus it promotes better sleep; it’s a key mineral indicated in muscle function, cramping AND critical for those with PMS (especially painful cramping), Mg is a super juicy nutrient to boost energy whilst also helping to regulate blood sugars. We can go on, but let’s go on with a recipe to top these foods up in your diet.

 

MAGNESIUM RICH MYSTERY SLICE AKA NO-BAKE BROWNIEServes 12-16
GF / DF / VEGAN (OPT)

250g pitted dates or medjool (up to you)
1/4 cup boiling water
160g or approx 1 1/2 cups mixed nuts – I used walnuts, pistachios, macadamias and almonds
1/4 cup almond or other plant based milk as you wish
4 tbsp raw cacao powder
100g dark chocolate for the top
1 tsp coconut oil
Sea salt to serve

Soak the dates in the boiling water for 10 minutes or more, to soften them. Blitz dates (with soaking water), with nuts, cacao and almond milk to form a rough, textured dough. Press into a lined loaf tin and set in freezer. Melt the chocolate with the coconut oil then pour over the top of the slice and set in fridge for 3-4 hours. Remove from fridge, slice into pieces, sprinkle with sea salt and tuck in! Store in fridge up to 1 month.
