Loaded Guacamole

Serves 8-10 as a dip or 4 as part of a main meal

Gluten free : Vegetarian

3 large avocadoes, ripe

Juice of 1 lemon (approx 3-4 tbsp)

3 tomatoes, diced

1/4 red onion, peeled and finely diced

1 cup chickpeas, cooked

1/2 red capsicum, finely diced

1 tbsp extra virgin olive oil

1/3 cup finely chopped coriander leaves and stalks

200g cottage cheese or ricotta

Everything Bagel Seasoning, optional but delicious

To serve: Chilli flakes / tabasco, corn chips

Mash avocados, with 2 tbsp lemon juice, salt and pepper. Toss tomatoes, onion, chickpeas, coriander, extra virgin olive oil and remaining lemon in a bowl, season and mix. Spread guacamole around a serving plate. Dollop cottage cheese around the guacamole and sprinkle with Everything Bagel Seasoning (not sponsored I just love it). Top with the tomato chickpea mix. Sprinkle with chilli flakes or tabasco and serve with corn chips.
