Hot Honey Vego Bowls

Brown Paper Nutrition

These Hot Honey Vego Bowls are a beautiful example of how plant-forward meals can be satisfying, blood sugar–balancing and packed with nutrients your body thrives on.

Sweet potato brings complex carbohydrates and fibre to support steady energy, alongside beta-carotene for skin and immune health. The brown lentils add an impressive boost of plant-based protein and additional fibre, which is key for gut health, cholesterol management and keeping you fuller for longer. Together, they create a slow-release carbohydrate base that helps prevent those mid-afternoon energy dips.

Creamy cottage cheese adds high-quality protein and calcium to support muscle maintenance and bone health, while avocado contributes heart-healthy monounsaturated fats, potassium and extra fibre for satiety. A drizzle of chilli honey ties everything together – delivering that sweet-heat hit that makes the bowl crave-worthy, without needing heavily processed sauces.

With a balance of protein, fibre, healthy fats and complex carbs, this bowl supports stable blood glucose, digestive health and long-lasting fullness. It’s a delicious reminder that vegetarian meals can be robust, nutrient-dense and genuinely exciting to eat.

HOT HONEY VEGO BOWLS
Serves 3-4
3 tbsp extra virgin olive oil
2 medium sweet potatoes
2x 400g tin brown lentils, rinsed and drained
2 tbsp tomato paste
1 tbsp good quality taco seasoning @mingleseasoning
2 cups cottage cheese @barambahorganics
1 avocado
Chilli honey @capilanohoney

Heat oven to 200C and line a large baking tray with greaseproof paper. Chop sweet potato into 2cm dice, add to the baking tray, drizzle with 2tbsp extra virgin olive oil, season with salt and pepper and toss to coat. Spread out evenly over the pan and bake in the oven for 15-20 minutes (until golden). Heat a large frypan on medium to high heat (around the 15 minute mark of the sweet potato cooking) and add remaining 1tbsp olive oil to coat. Add the lentils to the pan, with the tomato paste, taco seasoning, salt, pepper and about 1/4 cup water and cook for a 4-5 minutes to allow the flavours to infuse. Stir throughout. Once the sweet potatoes and pork are cooked it’s time to build your bowl. Divide sweet potato, cottage cheese and lentils between bowls. Slice the avocado into chunks and add to the bowl. Drizzle approximately 1tbsp hot honey over the ingredients in each bowl and tuck in.
