I’m conscious of creating lots of variety in the meals I deliver to you all and wanted to serve up an epic and nourishing variation on the trending ‘hot honey bowls’ using @autralianpork mince, cottage cheese, sweet potato, avocado and hot (chilli) honey.
Ladies, if you’re looking to boost your ENERGY, this one has your name on it. Pork is an excellent source of THIAMIN – a key nutrient in energy production, and NIACIN – which helps to reduce fatigue and tiredness (yes please!) Both these nutrients play an important role in mood regulation and mental health too.
As for the PROTEIN content (which you know I go on about a lot), pork mince (lean) contains approximately 21g protein per 100g, making it an excellent way to reach your protein targets in a meal. Mince is always a great way to whip up a quick, nutritious, super tasty meal and this one DELIVERS.

HOT HONEY PORK BOWLS
Serves 4
3 tbsp extra virgin olive oil
2 medium sweet potatoes
500g lean pork mince
1 tbsp tomato paste
2 tbsp good quality taco seasoning
2 cups cottage cheese
1 avocado
Hot honey:
1/2 cup honey
1 tbsp chilli flakes
1 tsp apple cider vinegar
Heat oven to 200C and line a large baking tray with greaseproof paper. Chop sweet potato into 2cm dice, add to the baking tray, drizzle with 2tbsp extra virgin olive oil, season with salt and pepper and toss to coat. Spread out evenly over the pan and bake in the oven for 15-20 minutes (until golden). Make the hot honey by adding the honey, chilli flakes and apple cider vinegar to a small saucepan, then bring to a boil and reduce to low for 3-4 minutes. Turn off the heat, allow to cool and infuse the chilli whilst you cook the pork. Heat a large frypan on medium to high heat (around the 10 minute mark of the sweet potato cooking) and add remaining 1tbsp olive oil to coat. Add the pork mince to the pan and brown off, turning throughout to ensure even cooking. Once browned add the tomato paste, taco seasoning, salt and pepper and cook for a further 5-6 minutes to allow the flavours to infuse. Once the sweet potatoes and pork are cooked it’s time to build your bowl. Divide sweet potato, cottage cheese and pork between bowls. Slice the avocado into chunks and add to the bowl. Drizzle approximately 1tbsp hot honey over the pork mince in each bowl and tuck in.
