Halloumi, whipped edamame chickpea and herbs on my high fibre buckwheat flax bread – so incredibly yum, nourishing, satisfying and bringing some veggie bang to your plate.

EDAMAME CHICKPEA WHIP
Serves 4-8 (depending on how big you want to go – I’m generous with the spread)
1 cup cooked edamame beans
1 cup cooked chickpeas
1 tbsp tahini
1/4 cup lemon juice + 1/2 tsp zest
2 cups mixed herbs
4 tbsp extra virgin olive oil
good pinch sea salt and black pepper

Add all ingredients to a blender or food processor with 1/4 cup water and blend until smooth. Use as a toast topper, dip, added to the base of a salad bowl, in wraps or a base for eggs and veggies.
