Make friends with this Spring delight GREEN AND SNOW PEA PISTACHIO SALAD people! It’s light, flavoursome and honestly just the best salad to serve with whichever protein of your choosing. Great with a heart serve of avocado too. Full recipe below.

GREEN AND SNOW PEA PISTACHIO SALAD
Serves 4 as a side
Gluten free : Dairy Free : Vegetarian

1/2 red onion, peeled and finely sliced
1 tbsp red wine vinegar
300g snow peas
150g frozen peas
1/2 cup pistachios, roughly chopped
1/2 cup dill leaves (or mint / basil if prefer)
1/2 cup coriander, leaves picked, stalks finely chopped
3 tbsp extra virgin olive oil
1/2 tsp lemon zest + lemon to squeeze over
Iodised salt and black pepper

Add the sliced red onion and red wine vinegar to a bowl, toss to coat, and set aside to pickle whilst you prepare the salad. Blanch and refresh both the snow peas and peas, drain and set aside. Toast the pistachios in a frypan on medium heat until lightly golden and fragrant, then set aside. Toss peas, snow peas, red onion (with the vinegar), dill, coriander (leaves and stalks), extra virgin olive oil and lemon zest together in a bowl, season with iodised salt and black pepper. Give the salad a big squeeze of lemon juice, top with the pistachios and serve.
