HELLO LOVERRRR… Green Sauso Rolls – vego obv and not an every day food but something to enjoy on a weekend of play. 😊I’ve replaced meat with lentils, peas, spinach, buckwheat, herbs, sunflowers seeds – lots of yummy plants. I may have added some cheeky feta in there too.

Makes 18 small rolls

1 cup buckwheat
150g frozen spinach, defrosted and drained well
100g frozen peas, defrosted
200g cooked lentils
1/2 cup sunflower seeds
1/2 cup feta
1 clove garlic, peeled
1 cup mixed fresh herbs
Sea salt and black pepper
3-4sheets puff pastry
1 egg, whisked
Preheat oven to 200c and line a baking tray with greaseproof paper.
Cook buckwheat until soft then drain.
Place all ingredients except puff pastry and egg into a food processor, season with salt and pepper and blitz.
Divide into 3-4 portions, onto your pastry sheets and roll tightly.
Slice into smaller pieces then place on baking tray, brush with egg and cook in oven for 30-40 minutes or until lightly golden. Enjoy with a good quality tomato sauce if you like – we loved @undividedfoodco new one – not sponsored just food love. Enjoy!!!!
