Green beans, salsa verde, feta, caramelised onion and walnuts

GREEN BEANS, SALSA VERDE, FETA, CARAMELISED ONION AND WALNUTS

Serves 4-6 as a side
200g green beans, trimmed and blanched
2-3 tbsp caramelised onion or onion relish
4 tbsp salsa verde (this is so easy to make!)
100g greek feta
1/4 cup walnuts, roughly chopped

 

 

Lay green beans onto serving platter, top with onion relish and salsa verde. Crumble feta over the top and finish with walnuts.

Make salsa verde by combining around 1 1/2 cups fresh herbs such as parsley, mint, coriander in a food processor with 1/2 cup extra virgin olive oil, 1 clove garlic (peeled), 2 tsp dijon, 2 tsp capers, 1 tbsp red wine vinegar, black pepper in a food processor and blitz. Add extra lemon juice into the blend as desired. Store in fridge up to 1 week or freeze in smaller portions for use.
