FODMAP FRIENDLY HERBED FISH AND SUMMER VEGES

Ten minute meals are ideal in anyone’s world but this one will set you in good step for a FODMAP friendly dinner and a lovely satisfied, well nourished tummy too.

FODMAP FRIENDLY BAKED HERB FISH, BROCCOLI AND SQUASH

Serves 2

GF : DF : SF

350-400g piece of white fish such as a ling, cod, snapper or barramundi, approx 1.5-2cm thick

1 head broccoli

4 yellow summer squash

3 tablespoons olive oil

2 tablespoons each finely chopped parsley leaves and coriander, stalks included

sea salt and black pepper

lemon wedges to serve

Preheat oven to 220C and line a large baking tray with greaseproof paper

Cut broccoli into small florets and slice squash into quarters, then arrange on tray.

Drizzle fish on one side with olive olive then sprinkle over half the herbs evenly. Place on tray herb side down, drizzle with a touch more olive oil and finish with herbs, sea salt and pepper.

Drizzle olive oil over the vegetables and toss with sea salt.

Bake for 10 minutes in the top of the oven.

Remove from oven and serve with lemon wedges.
