This Green Tahini Chicken with Crispy Rice is exactly that.

CRISPY RICE WITH GREEN TAHINI ZATAR CHICKEN
Serves 2
4 chicken thighs
2 tbsp zatar spice blend
2 cups cooked white rice
1 tbsp extra virgin olive oil
1 tbsp maple syrup
Dash chilli oil
1 cucumber, cut into chunks
3 cups baby spinach leaves
3-4 tbsp pickled red onion

Green Tahini Dressing:
1/4 cup tahini
Handful coriander
Handful parsley
Juice 1 lemon
1 garlic clove
Water to loosen

Lightly spritz the chicken thighs with extra virgin olive oil and sprinkle zatar all over, then roast chicken thighs at 220°C for 20-25 minutes. Add cooked rice to lined baking tray, drizzle with the tbsp extra virgin olive oil, maple and chilli oil, season and toss, then spread evenly and place in oven to bake with the chicken. Half way through, give it a toss and spread out again. Once cooked, allow to cool on tray. Whilst they cook blend the tahini dressing and prep the vegetables. Add spinach, cucumber and pickled onion to a bowl with dressing to your preference (save rest for another day). Then once the chicken is cooked, cut it into chunks. Divide salad between serving plates, top with the rice and chicken, season with salt and pepper and eat immediately.
