COFFEE WALNUT AND SEED ENERGY BALLS

Makes 12-16

Gluten free : Dairy Free :

1 cup pitted dates

1/4 cup strong coffee

2 tsp vanilla extract

1 tbsp maple syrup

1/2 tsp cinnamon

1/2 cup ground linseed, sunflower seed, almond meal

1/2 cup hazelnut or almond meal

1 cup walnuts

2 -3 tbsp Raw cacao powder (opt)

 

Soak dates, coffee, vanilla extract and maple syrup in a bowl for 15 minutes. Add Cinnamon, LSA (linseed, sunflower seed, almond meal), hazelnut or almond meal and walnuts to a food processor and blitz to a crumb, then add the soaked dates with all the liquid and blitz to a dough. Remove from food processor. Measure heaped tablespoons, roll into a ball and then through the raw cacao powder. Store in fridge up to 3 weeks.
