CHOC CHIP PRETZEL COOKIES 

Makes 24 cookies 

¾ cup extra virgin olive oil 

½ cup maple syrup 

½ cup almond butter 

1 egg

2 tsp vanilla extract 

1 ½ cups wholemeal self raising flour 

1 ½ cups rolled oats

¾ cup dark chocolate chips or chopped chocolate 

1 cup pretzels, broken into smaller pieces 

¼ cup almonds, chopped 

Heat oven to 180C. In a large mixing bowl whisk together extra virgin olive oil, maple syrup, almond butter, egg and vanilla until smooth in consistency. Add wholemeal self raising flour, otas, chocolate chips / chunks, half the pretzels and all the almonds and mix to form the cookie dough. Let this dough sit for 10 minutes to allow the liquid component of the batter to soak into the dry ingredients. When ready, scoop 2 tbsp measure (I used an ice cream scoop for ease), roll into a ball shape and press some of the remaining pretzels into the top to finish. Place on the Greenpan GreenLife Non-Stick Ceramic Baking Tray (18”x13”) and press down lightly with finger tips. Repeat with remaining dough, allowing 1-2 cm between each cookie for spreading. Bake for 10 minutes in the oven. Cool on the Greenpan Tray completely before transferring to an airtight container for storage.
