BREADCRUMB COOKIES

Makes 16
2 bread rolls, blitzed = 210g breadcrumbs
1/2 cup extra virgin olive oil or melted butter
1/2 cup coconut sugar
2 eggs
2 tbsp peanut butter
1/2 tsp baking powder
3/4 cup sultanas or you could go choc chips if that’s your vibe!

Heat oven to 180C (fan forced). Line a large baking tray with greaseproof paper. Combine oil, sugar, eggs, baking powder and peanut butter in a bowl and whisk to combine. Add breadcrumbs and sultanas and mix. Measure 1 1/2 tbsp measures of dough onto the tray, rolling and pressing down as you go (as I said I’d actually flatten these more next time – so advise doing so here). Set in the fridge for 20 minutes (if you have time – just helps the crumbs absorb more of the moisture). Bake 20-22 minutes or until golden and crisp around the outside. Tuck in!
