There’s something about banoffee that makes it very difficult to resist -creamy, caramel-like sweetness, banana and toasted coconut all in one combination. This banoffee-inspired chia pudding takes those flavours and turns them into a simple breakfast built around fibre and plant-based ingredients.
Chia seeds are the star here, and for good reason. They’re an easy way to add a substantial amount of fibre to breakfast, while also contributing plant-based protein and predominantly unsaturated fats. Combined with almond milk and toasted coconut, they create a creamy pudding that can be prepared ahead of time and kept in the fridge for an easy breakfast.
The banana adds sweetness, texture and more fibre, while the caramel element comes from one of my favourite simple tricks: blending Medjool dates with a little hot water and a pinch of salt. It creates a thick, sticky date caramel without needing to cook an actual caramel sauce.
I like serving the pudding in layers, with banana, date caramel and toasted coconut running through the chia mixture. You get creamy, chewy and crunchy textures in every spoonful, while the overall recipe remains incredibly simple.
It’s a good example of how a few plant-based ingredients can come together to make a breakfast that feels indulgent but still has a strong nutritional foundation – particularly when it comes to fibre.

BANOFFEE INSPIRED CHIA PUDDING
Makes 1 pot – serves 1, or you can split to 2 serves and enjoy with yoghurt and granola too
3tbsp chia
20g dates (4 pitted and chopped)
1/4 cup boiling water
3/4 cup almond milk
1/2 tsp vanilla
1 tsp maple syrup
2tbsp toasted coconut
Mix the dates with boiling water and allow to sit for 5 minutes, then mash a little before stirring in the chia, almond milk, half the coconut, vanilla and maple. Leave for 10 minutes, stir again, then top with sliced banana and remaining coconut. Refrigerate for at least 2 hours or overnight. I tend to make 2-3 of these at a time as we all enjoy them as a family.
