Banana Oat Wholefood Cookie Cups with Berries and Coconut Yoghurt

Check out how cute these berry coconut cookie cups aka tarts came out!!!!

I used my Banana And Oat Wholefood Cookie Bake Mix @mt_elephant and then pressed them into muffin tins instead of baking them as cookies. Once I’d pressed them in I baked them for 15 minutes, then used a spoon to press the tart into the tin more (rather than have it rise as a cookie would) and then baked a further 5 minutes (20 minutes in total, same heat). I let them cool and then popped them in the fridge so they were nice and firm and ready for their delicious coconut yoghurt with berries in the middle! I’m so stoked on the result. They made a super little breakfast tart and one you could defiintely pull out for the festive season or brunch with friends.

The Bake Mix only needs olive oil and banana to come together so it’s 100% #plantbased if you’re using a coyo too – fun right!?!?!?!
