A current favourite pre-workout snack and one the kids love too. Made with 3 simple ingredients, no egg, butter or oil required.

PRO TIP: Don’t jump the gun on rolling/shaping these ones – it’s really important you leave the banana to soak into the oaty muesli (and chocolate chips too) so they bind properly.

BANANA MUESLI CHOCOLATE CHIP COOKIES
Makes 8 medium/lg sized cookies
Egg free / Dairy free (opt)

2 medium very ripe bananas
2 cups good quality plain Muesli of choice, not toasted
100g chocolate chips (opt)

Heat oven to 175C and line a large baking tray with greaseproof paper. Mash the bananas into a puree in a mixing bowl. Add the muesli and chocolate chips and mix. Set aside to bind the ingredients for 10 minutes (an important step, not to be missed). Portion into 8 pieces, then squeeze together tightly and press down onto the baking tray. Repeat with remaining cookie dough. Bake for 15-16 minutes or until lightly golden. Store in an airtight container up to 4 days.
