Whole baked miso sweet potato with Japanese inspired tuna smoosh

Some of my favourite recipes start with one simple question: How can I make everyday ingredients taste really exciting?

This whole baked sweet potato is a perfect example. Baking the sweet potato whole allows it to become beautifully soft and naturally caramelised, while a quick brush of savoury miso glaze transforms it into something that feels restaurant-worthy with almost no extra effort.

The real hero, though, is the tuna smoosh. It’s a creamy, flavour-packed mixture of tuna, spring onion, pickles, lemon zest, furikake and toasted nori that comes together in minutes and turns a humble baked potato into a balanced, satisfying meal.

Nutritionally, this recipe ticks a lot of boxes. Tuna provides high-quality protein to support muscle health and keep you satisfied, while sweet potato contributes fibre and slow-release carbohydrates for sustained energy. The nori and furikake add layers of umami along with minerals like iodine, and the miso brings plenty of savoury depth so you don’t need lots of ingredients to create big flavour.

One of the things I love most about this recipe is how adaptable it is. Use Greek yoghurt for a lighter, higher-protein tuna filling, or choose a good-quality mayonnaise if you’re after a richer texture. You can also add cucumber, avocado or extra herbs depending on what you have in the fridge.

Like all the recipes in my Lazy Healthy series, this is about making nourishing food feel achievable. Minimal prep, very little washing up and ingredients you can keep on hand, all coming together in a meal that’s comforting, balanced and genuinely delicious.
