Baked feta is a completely underrated way to serve up cheese. Or, perhaps it’s just it doesn’t received the air time it deserves. Either way, this BAKED FETA GRAPES AND STRAWBERRIES is ready to change minds. Loved this as a quick mid arvo snack with the family on a getaway up the coast. It’s a few ingredients which you can grab easily from the shops and it’s impressive in flavour, colour and nutrition. Serve it up with your favourite lavosh style cracker, seed cracker or toasted sourdough pieces – whatever works for you, and what you have on hand.

BAKED FETA GRAPES AND STRAWBERRIES 

Serves 4 as a side or snack

1x 200g block Greek Feta

250g punnet strawberries, green stems removed

2 cups red grapes

Extra virgin olive oil

2 tablespoons chopped pistachios or other nuts

Opt: dried edible flours to garnish

 

Heat oven to 200C (fan forced). Add strawberries and grapes to a small baking dish and toss to coat. Place feta in the middle of the fruits, drizzle generously with extra virgin olive oil then place in oven to bake for 20-25 minutes or until feta is golden and the fruits are jammy and delicious. Top with chopped pistachios and some edible flours if desired and enjoy with your choice of cracker or toasted bread.
