AVOCADO QUINOA SALAD
Serves 4 as a side

1 cup raw quinoa, rinsed
1 lemon, zested
1/4 bunch parsley, leaves picked
1/4 bunch mint, leaves picked
1 medium, avocado, peeled and sliced
1/3 cup lemon juice (approx 2 small lemons)
1/4 cup extra virgin olive oil
sea salt and black pepper
Cook the quinoa according to instructions on packet. Fluff with a fork and set aside to cool. Once cooled toss with remaining salad ingredients, drizzle with dressing, season with sea salt and pepper and serve.
