Grilled asparagus, smoked trout, and the mossssstttt delicious hemp mustard creme! Yum!!! Plenty of essential fatty acids, nourishing proteins and as for the added bonus extras – did you know asparagus is rich in a bioflavonoid call ‘rutin’ ? Its role is to protect our cells from free radical damage, assist the body’s production of collagen, and to strengthen capillaries so it’s a wonderful nutrient for the health of our skin! Love knowing this when I’m devouring a yummy meal.
GRILLED ASPARAGUS, HEMP MUSTARD CREME AND SMOKED TROUT
Serves 4 as a starter or 2 as a main
Gluten free : Sugar free : Dairy Free (optional)
2 bunches asparagus, woody ends trimmed and stalks rinsed
1 tbsp olive oil
200g smoked trout, deboned and flaked
2 tbsp hemp seeds
¼ cup dill leaves, picked
2 tbsp shredded parsley or baby parsley
1 tbsp finely sliced chives
½ lemon
Hemp mustard creme:
¼ cup plain yoghurt or coconut yoghurt for dairy free
1 tsp dijon mustard
2 tbsp hemp oil
Sea salt and black pepper
Heat a large fry pan over medium heat, add 1 tbsp olive oil and cook asparagus for 3-4 minutes, tossing every now and then for even cooking. Combine yoghurt, dijon, hemp oil, and a good pinch of sea salt and pepper in a bowl and whisk. Once asparagus is cooked, arrange on a plate and drizzle with hemp mustard creme. Top with smoked trout, hemp seeds, dill, parsley, chives and a squeeze of lemon juice and serve.
