Made this on repeat during our time in Newy recently, staying in our new fave home, The Willows, in Cook’s Hill (Newcastle)

2 ingredients to make the omelette, 3 including protein rich yoghurt on top.

Make it:
Mash banana in a bowl. Crack in eggs and add a dash of vanilla if it’s handy, but leave out if not, no worries! Whisk well. Heat a large frypan on medium heat. Add some spray olive oil or enough oil / butter to prevent sticking. Pour batter into pan and cook 4-5 min one side before folding over and cooking a further 2-3 min. Serve with Greek yoghurt on top x extra banana and if you have some nuts left in a jar or packet give them a choppy chop and pop them on top. Great way to get protein in your breakfast – SO SATISFYING!
