RECIPE 1: STRAWBERRY LYCHEE COCONUT ALMOND CAKE 

Serves 10-12 

Gluten Free / Dairy Free 

3/4 cup melted coconut oil 

1/2 cup honey 

6 eggs 

1 1/2 tbsp vanilla extract 

1 1/2 cup almond meal 

1 1/2 cup desiccated coconut 

3/4 cup arrowroot /tapioca flour 

3 tsp gf baking powder 

250g coconut yoghurt 

200g strawberries, sliced 

15 lychees, peeled and seeds removed, pulled into small pieces

Heat oven to 170C, grease and line 2x20cm cake tins. In a large mixing bowl whisk together coconut oil, honey, vanilla and eggs, then add almond meal, coconut, arrowroot and baking powder and mix. Divide between the cake tins and bake in the oven for 30-35 min. Allow cakes to cool completely then spread half the coconut yoghurt over the base layer, top with strawberries and lychees. Add a skewer to the middle to hold the cake together and repeat with the remaining ingredients, decorating the top with the fruit as you feel most creative. Slice and enjoy! Store in the fridge for up to 5 days. 

RECIPE 2: YUZU COLLAGEN SLICE 

Serves 16

Gluten free / Dairy Free / Vegan (optional)

1 cup raw cashews 

½ cup raw macadamias 

½ cup almond meal 

1 cup desiccated coconut 

¼ cup collagen powder (optional) 

2 tbsp yuzu juice* 

2 tbsp maple syrup

2 tbsp coconut oil 

Combine all ingredients in a food processor and blitz until a dough is formed. Press into a lined loaf tin and set for 3-4 hours in the fridge. Slice into pieces and enjoy. Store in the fridge for up to 2 weeks or freezer for up to 3 months. 

*Remove collagen powder for the vegan option

RECIPE 3: PLANT-BASED GINGER LIME SLICE 

Serves 16

Gluten free / Dairy Free / Vegan 

Base:

½ cup walnuts 

3 medjool dates, pitted 

¼ cup desiccated coconut 

2 ½ tbsp melted coconut oil 

½ tbsp ground ginger 

½ tsp vanilla extract 

Top:

⅓ cup melted coconut oil 

2 tsp vanilla extract 

½ cup cashew butter 

¼ cup maple or rice malt syrup 

2 tbsp ground ginger 

1 ½ tsp lime zest, plus extra for garnish 

Add all ingredients for the base to a food processor and blitz until a rough dough forms. Press into a lined 12x14cm loaf tin (or similar), flatten to create an even surface then set in the freezer whilst making the top. Wipe the food processor clean, then add all ingredients for the top to the food processor and blitz. It will be a loose creamy consistency. Pour the top over the base and place into the fridge to set for 3-4 hours. Slice into pieces, give another sprinkle of lime zest to the top and enjoy. Store in the fridge for up to 2 weeks or freezer for up to 3 months.
