This is what a serve of vegetables looks like…

And this is your nutritionist dropping a friendly reminder to eat your 5-7 serves of veggies and get some colour on your plate!

Can’t remember what a serve of veg looks like?

Here’s a quick example for you – you can eat these across the day in different meals and / or I challenge you to once per week pack them all into one! Our bodies, in particular the trillions of microbes that reside in our gut THRIVE from an abundance of plant based foods in the diet. The best thing you can do is pack more of them into your life.

If you want to see veggies and plants PACKED into recipes then be sure to jump over to @eimeleaustralia blog where I’ve contributed to a whole library of them, including recipes using their nutritious plant based products formulated by @plant_proof .

A serve of vegetables is around 75g which could include:
+ 1/2 cup cooked green or orange low starch veg such as broccoli, spinach, peas, carrots
+ 1/2 cup cooked legumes (you’ll enjoy extra protein from these too)
+ 1/2 medium potato / sweet potato or other starchy veg. I like to use a small fist as a reference
+ 1/2 cup cooked corn
+ 1 tomato or equivalent in cherry tomatoes
+ 1 cup raw greens (I’ve included zucchini and my herbs here…honestly herbs because I thought I had spinach but my kids had eaten it lol!) – eat your favourites!

Most importantly, find some fun and creative ways with eating your veg. Some of us enjoy raw / as is, but if that’s not you then look at juicy recipes to inspire you.
