We add in fresh vegetable sticks with hummus for plant protein and fibre, cheese for some calcium and a gut loving sweet like Jacq’s Flax Balls (recipe coming soon) to balance and energise the day with plenty of gut loving ingredients.

MEXICAN INSPIRED RAINBOW SLAW WITH CHIPOTLE CORN
1 bag of kale slaw
1 chicken breast diced
2 tsp olive oil
2 tbs arrow root powder
1 tbs master foods chipotle spice blend
Corn:
1 cob of corn cut into quarters length ways
2 tbs olive oil
2 tsp master foods chipotle spice mix
Dressing:
2 Tbs mayonnaise
2 tbs light Greek yoghurt
Zest and juice of 1 lime
1 tbs Byron bay Smokey chipotle hot sauce
2 tbs chopped coriander
Salt & pepper
Toss diced chicken with olive oil, tapioca flower and chilies spices. Next coat your corn quarters with olive oil & chipotle spice blend. Cook chicken in air fryer for about 12-13 mins at 190 C shaking regularly. cook corn at 200C for about 15 mins also shaking regularly. To make dressing add all ingredients to a bowl and thoroughly mix. Season to taste.
To assemble: Add 1 bag of rainbow kale slaw to your bowl/lunch container. Sprinkle with pepitas. Toss over chicken, place corn on the side, and drizzle with dressing ( if not eating straight away dress at time of eating). Serve with an extra wedge of lime and a scattering or coriander leaves.
